The perfect recipe for a beginner bread maker!

The dough came together very quickly. The focaccia pizza was soft, supple and a pleasure to work with.  The dough is baked in a jelly roll pan. If you don’t have a jelly roll pan, try any of the amazing ones below!


To achieve the scraggly looking top for the Focaccia, stretch your fingers apart and out, making holes in the bread with your fingers while stretching the dough to fit the pan. With 2 rise times, which are 1 hour each (placed in a warm draft free space) it felt like no time at all until it was ready to be baked.
This was my first attempt at making Focaccia, if I would have know it was going to be this easy and absolutely FANTASTIC I would have made it long before now. The recipe yields an extremely soft and tender bread, which I’m sure is due to the amount of olive oil used when making the dough. Let’s gather the ingredients and make it together.

Homemade Focaccia Pizza Ingredients:

  • 1 3/4 cups warm water (about 110 degrees)
  • 1 package dry yeast or 2 1/4 Teaspoons loose yeast you buy in bulk
  • 5 cups all purpose flour
  • 1 Tablespoon white sugar
  • 1 Tablespoon salt
  • 2 cup extra virgin olive oil
  • Tomato sauce and topping of your choice
We start the recipe by combining the warm water, yeast and sugar in a medium size bowl. Let the yeast activate until it’s very bubbly, about 15 minutes.
In the bowl of an electric mixer fitted with a hook attachment add the flour, salt and 1/2 cup of olive oil. Add the activated yeast. Mix the ingredients together in the bowl on low speed.
Once the dough has formed in the bowl, continue to kneed with the hook attachment for 5 or 6 minutes on medium speed until the dough is soft and smooth. If the dough is very sticky, add a little more flour to the bowl until the dough is slightly tacky. You want the dough to be slightly tacky.
Remove the dough from the mixing bowl to a floured surface. Knead the dough by hand 2 or three times.
Coat a large bowl with olive oil and place the dough in the bowl. Turn the dough to coat it with oil on all sides. Cover the bowl with a clean towel or plastic wrap and place it in a warm, draft free place in your kitchen to rise to double in size, about and hour.

After the first rise, place 1/2 cup of olive oil in a jelly roll pan. Spread the olive oil out to cover the pan. Place the dough in the pan.  Start spreading the dough out in the pan with your hands, turn the dough over to coat it with olive oil on all sides. Continue to spread the dough out to fit the pan to the edges.  As you spread the dough out, spread your fingers out and make finger holes (just let your fingers poke through the dough as you spread it out) while you stretch it to fit the pan.

Place the dough in a warm draft free place to rise a second time, to double in size. This takes about an hour. While the dough is rising, preheat your oven to 425 degrees.  After the dough has risen for the second time, sprinkle the dough with a little olive oil on top and bake it for 20 – 25 minutes or until golden brown. 

After the bread baked I removed half the bread from the pan to use as sandwiches for the following day. I topped the bread still in the pan with tomato sauce, yellow peppers onions and shredded mozzarella cheese, you can precook the toppings if you prefer. All it needed was to be broiled for the cheese to melt and dinner was served! It was incredible!! Please try this Focaccia recipe and made Homemade Focaccia Pizza, you’ll absolutely love it! Add tomato sauce, the toppings of your choice and shredded cheese to the top of the focaccia bread after it’s baked. Broil or bake the focaccia until the cheese has melted.
